Pear dry processing technology

The dried pears use natural or artificial drying to evaporate free water and colloidal bound water in the flesh, increasing the concentration of soluble substances to a level that is difficult for microbes to use. 1. Process Pear fruit → washing → peeling, to the heart, to rot → cut (circular or thin strips can be) → cook sulphur → baking → soft (wet) → packaging → finished product. 2. Selection of raw materials Selection of fully mature, fine and dense flesh, less stone cells, thick flesh, small heart, high sugar varieties as raw materials. Remove pests and rot fruits. 3. Method of production Select the good pear fruit to remove the stem, wash and cut into 4 valves, dig the core, and then the pear valve into boiling water and cook for 15 minutes, when the pear petals are transparent, remove and add cold water In the cooling, remove and drain water, placed in a baking tray and smoked into the indoor fumigation 4 to 5 hours (200 grams of sulfur per 100 kg of pear). Then the smoked pears are sent to the drying room for baking. The drying room temperature is 70-75°C, and the finished product has a moisture content of 10%-15% and the temperature is reduced to 50-55°C. The wooden box seals the lid and is wetted and softened after 3 to 5 days. The softened pears are then sealed and stored in plastic food bags according to quality classification. 4. Quality indicators Pear dry bright color, complete slices, thick meat, a fragrance smell; no mildew, no insects, no silt and other impurities, do not stick to each other when gripped by hand, and flexible; water content 10 %~15%, sulfur content does not exceed 0.05%; no coking, no crust.
