Fresh cucumber coating

Cucumber is a difficult-to-storage fruit and usually has only 3 to 5 days of shelf life. Coating preservation is a new and simple method of storage. Its practice is to take a certain amount of sucrose fatty acid ester, add quantitative water, heat to 60-80°C, stir and dissolve, and slowly add a certain amount of sodium alginate. Continue to stir until fully dissolved and allow to cool to room temperature. (Experiment shows that the optimal composition of Xu Membrane is 5% sucrose fatty acid ester and 0.48% sodium alginate). The cucumbers with suitable maturity, no mechanical damage, and no pests and diseases were immersed in the above-mentioned formulated coating solution. After immersed for 30 seconds, the cucumbers were taken out, dried naturally, and then stored in a plastic bag at room temperature. Using this method of storage can significantly extend the shelf life, storage for more than 10 days, can still maintain the fresh and crisp green cucumber product value.
